Lamb and Locale – A lamb and beer pairing at Ledger

We recently treated ourselves to this amazing beer and lamb pairing at Ledger, our favorite restaurant in Salem. The lamb was sourced from the North Star Sheep Farm and the beer brewed by Notch Brewing.

There were five courses with six beers total since they handed us all a Zwickel as we walked in the room.

Lamb Tartare and Slanted and Enchanted (this was the only course I didn’t photograph the two together.)

My first time having lamb tartare and it was fantastic. I’m sometimes weary of eating any sort of meat that is uncooked, but the chefs at Ledger have helped broaden my horizons on that front. The beer, a hoppy German lager, was just hoppy enough for my taste.

Lamb Sausage and Teenage Riot

Ledger makes some very good sausage in-house and this was no disappointment. The mustard was made with the Teenage Riot beer this course was paired with and my only complaint was I wanted more.

Rye Campanelle and Suspect Device

I’m not ranking these courses from 1-5 but if I were this would be my second favorite of the bunch. The house-made ricotta with a hint of coffee flavor, the rye pasta and rye crumbs sprinkled on top and the spigarello all coupled with the braised lamb shoulder were a perfect match to the dry Irish stout called Suspect Device.

Beechwood Smoked Lamb Belly and Fire Walk With Me

The beer was smokey. The lamb belly was smokey. The birch glaze and the parsnip puree were very sweet. This course was my favorite and it could have been dessert. The flavors paired so well together with the slight bitterness of the radish and frisée. I never knew pork belly could be given a run for it’s money.

Lamb Fat Hand Pie and Loggerhead

This pie was delicious. The marshmallow was soft and creamy. The ice cream was a little too smokey for me, but still had a perfect consistency and helped temper the sweetness of the beer. This beer had an extra step of preparation after being poured. They took a hot metal rod out of the fire and dipped it into each mug to bring about a caramelization of sugars in the beer.
